Couverture,
which is French for coating or covering, refers to premium quality chocolate
that contains between 32-39% cocoa butter. The total percentage of the combined
cocoa butter plus cocoa solids must be at least 54%. This high cocoa butter
content makes it the preferred chocolate choice for dipping, coating, molding
and garnishing.
A MORSEL OF NW CHOCOLATE HISTORY
The
Candy Basket, a Portland tradition for several generations, has been
around since 1934. They have the largest selection of couverture chocolate
in the Northwest, and their signature pieces include milk chocolate almond
toffee, beaver claws (Oregon’s take on the traditional turtle), and huckleberry
