WALKERS REUNION RECAP

Thanks to all those who attended our Chocolate Walkers Reunion last month at The Pearl’s Caffé Umbria. It was great to spend a few hours together and enjoy some of the Caffé’s wonderful offerings. Afterwards, a few of us continued a few blocks down the street to Sweet Masterpiece for some more goodies. We plan on scheduling another outing in the near future, so stay tuned for more details.

CHOCO-WORD & RECIPE OF THE MONTH

For many, summer brings memories of time around the campfire. For most, this includes S’MORES! Developed in the early 1900’s, these outdoor treats are traditionally made with a roasted marshmallow and piece of Hershey Milk Chocolate sandwiched between two graham crackers. August 10th is National Smores Day. Whether you are at the beach, a campground, or in your own backyard, why not also try a s’more with your favorite gourmet chocolate? A MORSEL OF NW CHOCOLATE HISTORY

Michele Chirgwin is my kind of gal. Growing up in Lebanon, Oregon, she had the annual holiday job of carefully stirring the corn syrup for exactly 12 minutes for her family’s fudge recipe. As a married woman, she started making truffles and you might say her confectionary creativity was getting slowly out of hand. Her husband started finding chocolate chip bags in the cupboards instead of food. And he knew she was really getting serious when he found 500 pounds of Guittard chocolate in their bedroom! Today, Michele’s Truffles can be found all over the Northwest with her factory producing up to 1,000 pounds of candy each day. OOPS! A NO MELT CHOCOLATE?

Swiss chocolate manufacturer Barry Callebaut has created a potential sensation- by accident. It’s called Vulcano and melts only in your mouth and has 90% less fat. Since Barry Callebaut is a manufacturer (which means they make chocolate from bean to bar and sell it to other companies), it’ll be at least two years before we’ll see products on the mass market containing this new type of chocolate. They say it has a crispier and crunchier mouth feel but tastes just like our favorite food group. For more info, see:

MILK, DARK…OR CAMEL?

A goat cheese chocolate truffle. This may sound wild to some of you, yet the right chocolate and cheese can compliment each other rather nicely. This combination is rather tame compared to what is heading our way. Al Nassma, based in Dubai, is the first company to make chocolate with camel milk. Their goal is to become “the Godiva of the Middle East” and plans to start selling its treats in the US in the next few months. If this takes off, we may see camels, along with our cows, goats, and llamas in a field near you! www.al-nasma.com
