CHOCOLATE WALKS: THE PEARL & LAKE OSWEGO

CHOCO-WORD OF THE MONTH: HAYSTACKS

Haystacks are confectionary piles of toasted coconut covered in milk or dark chocolate. Here in Oregon you can go to several chocolate shops in the coastal town of Cannon Beach, about 80 miles west of Portland, to sample these 2-bite mouthwatering morsels. Over a mile from this beautiful, quaint town there is another kind of haystack. This monolith, or sea stack to be more exact, is 235 feet high. It is the third tallest intertidal object in the world, which means when the tide is right you can walk out to it.Here is a unique image of this geological icon of the Oregon coast by California photographer Peter Greenberg. Be sure to click on one of the two bottom photos to better view the almost surreal view of this landmark. When in Cannon Beach, be sure to enjoy both types of haystacks-edible and geological!

There are many factors that affect the world's supply of cacao commodity beans: weather patterns, fungal infections, cocoa prices, and production. Last month, another one was added to the mix: hedge funds. Check our blog post on this recent development in the world of cacao.

 
 

CHOCOLATE & FIBER

Looking for ways to get more water soluble fiber in your diet? This task may one day get a whole lot easier thanks to the fibers found in cacao bean shells. The paper thin shells, which contain the blood-vessel-healthy polyphols, are removed from the cacao beans after the roasting process. Although these tests so far have been done only on rats, we may one day find this fiber source in supplements or added to other foods such as baking products, beverages, cereals and even yoghurt.

DAGOBA CHAI DRINKING CHOCOLATE

Ever have trouble deciding between a cup of chai or drinking chocolate? Well, now you don't have to thanks to this new product by this 9 year old Ashland, Oregon company. Chai is a blend of aromatic Indian spices and herbs, such as cardamom, cinnamon, ginger, star anise, peppercorn, and cloves. Add to this Dagoba organic cacao powder, unsweetened dark chocolate bits and sugar, you then know that you are on to something very special. Available late last month, this is their latest addition to their drinking chocolate line. Check a store near you and let us know how you enjoy this new twist to an old flavor.
